So shoot me for asking a stupid question but what is the reason for not using water as brake fluid (given that it doesnt compress)
Is it for better temperature control? Thats the only reason I can think of...

Even if water is ok why would you use it? Brake fluid is dirt cheap...
And yea the temperature is it. That's why your bike calls for Dot3 or Dot4

Having water in the brake fluid will cause corrosion and can damage the components in your caliper.

Probably because after few hard stops it would turn to steam lol.
